Ginger Tea
Boil 4-6 thin slices of fresh ginger (un-peeled OK) in 2 cups of water, simmer for 20 minutes
sweeten with honey or pure maple syrup to taste or drink as is.
Great for warming and stimulating
the digestion, calming to the nerves and wonderful for reproductive health.

Earth Shake Recipe
1 1/2 cups pineapple juice
1/2 cup crushed pineapples
1 large peeled and chopped carrot

--Put all ingredients in a blender
--Place on medium speed until well blended.
--Pour into a glass and serve

Optional - add chopped nuts, your favorite protein powder.  
I like to add Ningxia Red juice!

Oat Bars
Yields 2-13 x 9 pans (can easily cut recipe in half).
Preheat oven to 375 degrees F. Coat pans lightly with oil.

Dry:
1c Rolled Oats (not instant)
3c Barley Flour
2½t Baking Powder
2½t Cinnamon
2½c Dried Fruit or
Grated carrots or
Carob chips or
Grain Sweetened Chocolate Chips
1½c Chopped Nuts

Liquid:
5/8c Safflower Oil
2 ½c Apple Sauce (natural or organic unsweetened)
2 ½t vanilla extract
2 ½c Brown Rice Syrup

  1. In a large mixing bowl combine dry ingredients.
  2. In small mixing bowl combine liquid ingredients and blend into dry ingredients.
  3. Bake for 30 minutes. Cool. Cut into squares, rectangles, triangles, circles whatever.

Yummy Wheat-Free Muffins
Makes 12 muffins. Preheat oven to 350 . Coat muffin tins lightly with oil (better than paper liners,
so paper doesn't stick to muffins.)

Dry:
2c Arrowhead Mills Gluten Free Pancake & Baking Mix (recipe is on back but doesn't work this is
my version - if you need assistance let me know)
1t baking powder
1t xanthan gum

Liquid:
½c pure maple syrup
1c water
1t vanilla
¼c safflower oil

  1. In large mixing bowl combine dry ingredients.
  2. In small mixing bowl combine liquid ingredients and blend into dry ingredients, stirring only
    until lumps are gone.
  3. Fill muffin tins with batter ¾ full (batter will be pretty thick)
  4. Bake 15 to 17 minutes or until done.
  5. Test for doneness with a toothpick: should be moist but not wet.

Suggested add-ins: for variety, add one or more of the following; 1t ground cinnamon, ½t ground
ginger, ½c raisins or other dried fruit chopped, ½c chopped nuts, ½c coconut, ½c grated fresh
apple.

Store in plastic zip lock bag to retain moisture. Keep muffin in refrigerator. Can easily double
batch for freezer

Basic Oat Bran Muffins
Makes 12 muffins. Preheat oven to 425 degrees F. Coat muffin tins lightly with oil.

Dry:
2 ¼c oat bran
¼c raisins (or dates, currants or whatever)
1T baking powder

Liquid:
¼c pure maple syrup
1¼ c soy or rice milk
2 egg whites or egg substitute for two eggs
2T safflower oil

  1. In large bowl combine dry ingredients.
  2. In small bowl combine wet ingredients and blend into dry. .
  3. Fill muffin tins with batter ¾ full.
  4. Bake 15 to 17 minutes.
  5. Test for doneness with a toothpick: should be moist but not wet.

Store in plastic zip lock bag to retain moisture. Keep muffins in refrigerator. Can easily double
batch for freezer.
